Spicy Buddha bowl

Spicy or MILD - that’s up to you to decide. ;)

INGREDIENTS

For two people:

baking part

  • sweet potato (1)

  • beetroot (1 small)

  • turmeric

  • curry

  • salt

Spicy Quinoa

*peanuts (optional), tomato sauce

  • rdeča pesa (1 small)

  • curry

  • sol

začinjena kvinoja

*arašidi (po želji), paradižnikova mezga

Method

Preheat the oven to 190°C. Cut sweet potato in very thin slices and spread them over a baking tray together with beetroot (cut in smaller, 3x1 cm pieces). Sprinkle with curry, turmeric, and a pinch of salt. Bake for about 15-20 minutes. Stir when halfway through.

For the quinoa - finely chop the chunk of ginger, press the garlic, and add both ingredients to the frying pan with a little oil. Add turmeric, mix, and let the flavours combine for a minute or two. Then cut washed zucchini into smaller pieces and combine them with the goodies in the pan. When zucchini become softer, add quinoa, saute everything together for a couple of moments, pour over some water, and let it simmer until the quinoa is cooked (about 10 minutes). During the cooking time, add a few spoons of pumpkin or carrot puree, and if you want, you can add some tomato sauce as well.

Serve in a bowl, and voila - a colourful, spicy Buddha bowl is ready for you to take the first bite!

You can garnish it with some sesame seeds, peanuts, or pour over some pumpkin seed oil.
