Sweet Energy Nut Bars

Why not try to create something that can otherwise be bought in almost every grocery store? A very successful attempt - healthier yet the same taste!

ingredients

For 6 bars:

  • roasted peanuts (60 g)

  • roasted almonds (50 g)

  • roasted hazelnuts (30 g)

  • roasted pistachios (40 g)

  • maple syrup (40 g)

  • honey (65 g)

  • vanilla extract

  • pražene pistacije (40 g)

  • javorjev sirup (40 g)

  • med (65 g)

  • vanilijev ekstrakt

*You could make all kinds of substitutions and additions - millet, buckwheat groats, chia seeds, sesame seeds, dried fruits, coconut, pumpkin seeds.

Method

If the nuts aren’t roasted - don’t worry! Just distribute them across the baking tray and bake at 175°C for about 10 minutes or until lightly roasted and fragrant.

Have the mixture prepared before you start heating the liquids. Also, prepare a parchment paper on which you will then put the final mixture.

Combine maple syrup, salt and honey (be precise!) in a saucepan and stir over medium heat - bring to a boil. Continue boiling until the syrup reaches approx. 125°C (hard ball stage) on a candy thermometer. You can check that also by drizzling a small amount of the liquid from a spoon into a cup of cold water. If the stage has been reached, a firm ball will be formed.

From that point, you need to act quickly - add vanilla, immediately pour syrup over the nuts, and promptly stir until well distributed and evenly coated. In the next second, spread the mixture evenly over the parchment paper on the baking tray. Shape in the desired way, fill all the empty spaces, cover with another parchment paper layer, and with the help of a flat object (drinking glass), press the mixture firmly to close in all the holes and compact those nuts good.

Let the bars cool at room temperature for about 20 minutes (they should still be slightly warm and pliable at that point).

Gently place them on a cutting board. Cut into desired shapes and sizes - in my case, into 6 bars.

Let them cool completely, then wrap each bar in a parchment paper and store in a refrigerator.

*Or share with your company and they will disappear in a matter of minutes.
