Rice Souffle With Berry Sauce
A very light dessert. For those of you who like fresh desserts that are not that sweet.
Ingredients
For a Φ=21 cm cake pan:
Rice souffle
oat milk / other plant-based milk (900 ml)
apples (3)
lemon juice (from 1 lemon)
vanilla extract / pod (1/2 tsp)
(brown) sugar (1+ tbsp)
cinnamon (1/4 tsp)
berry sauce
strawberries (approx. 6)
raspberries (approx. 15)
water (approx. 100 ml)

Method
Rice souffle
Pour oat milk in a pot, add vanilla and bring to a boil. Add rice and brown sugar - if you want the dessert sweeter, add three tablespoons instead of one. Cook on medium heat (5/9 or 4/9) for 30 minutes - let it slightly boil. Stir every 3 minutes.
During that time, hash the peeled apples and squeeze the lemon (without seeds!).
After 30 minutes, the mixture of rice and milk should become thick, starting to stick to the bottom of the pot. If it is not thick enough, cook for 5 more minutes. Then mix in hashed apples, lemon, and cinnamon. Cook for 1-2 more minutes for the ingredients to connect.
Pour the mixture into a cake pan or any other, non-leaking appropriate pan suitable for baking. Bake the souffle in a preheated oven at 180°C for 35 - 40 minutes. When the souffle is baked (with a beautiful crust on top), it is best to wait for it to cool down a little - that way, you will be able to cut it nicely.
berry sauce
If frozen, defrost the berries, put them in a blender, add approximately 100 ml of water, and blend. You can, if you wish, strain the sauce to remove any unwanted seeds.
Cut a piece of souffle and serve with a few spoons of delicious, fresh berry sauce.
