Easy Apple & Poppy Seed Cake

This dessert is my current go-to when I want to create something that will satisfy the tastebuds of people who like CLASSIC DESSERTS and people who want something healthier.

It's not too sweet, and it doesn't taste healthy in a bad way.


Ingredients

For 28 x 22cm baking tray:

  • apples (1kg - approx. 7)

  • dates (100g seedless)

  • water (100 ml)

  • plant-based milk (1 cup - 200ml)

  • spelt flour (240g)

  • (olive / coconut) oil (50ml)

  • poppy seeds (160 g) - best are ground ones, but you can grind them yourself in a blender or food processor (you get a much more intense aroma, and the cake becomes more smooth and holds together better)

  • (wine-stone) baking powder (approx. 17 g)

  • eggs (2) or their plant-based substitute (chia seeds/flaxseeds), but haven’t tried it yet

  • vanilla extract (1/2 tsp)


Method

Soak dates in 100ml water. Meanwhile, grate the peeled apples into a larger bowl.

Then in a blender, blend dates with approx. 75ml of water (in which they were soaking) until smooth.

In a large bowl, beat the eggs with an electric mixer and gradually add the date mixture and mix until the mixture is fluffy. Add vanilla extract, plant-based milk, and oil and beat at medium speed until just combined. Using a wooden spoon, stir in the flour, poppy seeds, and baking powder. Lastly, add apples without the liquid at the bottom of the bowl.

Pour the dough into a greased baking tray and bake at 200°C for 30-40 minutes (in my case, it’s usually 35) until the top is golden brown.

Wait for it to cool down, and enjoy!

You can decorate it with marmalade, chocolate, or seasonal fruits and serve it with ice cream or anything your imagination craves at the moment. I like it plain - so simple yet so delicious!
